Growing up horchata was one of my favorite drinks and I had not had any since becoming vegan until I came across this incredible recipe on the Minimalist Baker blog which is 100% vegan! It has completely turned my world around, so I wanted to share it with you guys as well. Okay, lets do this...

You Will Need:       
  • 3/4 cup long grain white rice
  • 6 cups water-divided
  • 1 cup vanilla almond milk 
  • 1/2 - 3/4 cup pitted medjool dates
  • 1.5 tsp pure vanilla extract
  • 1 cinnamon stick 

Let's Get Cooking:
  • Soak rice in 2 cups of very hot for 2 hours but make sure its not boiling water. The rice should be soft but still very raw - you should be able to snap a piece in half with your fingernail without much effort. Now drain it and add it to a blender.
  • Add 4 cups water, dates and the cinnamon stick. Blend for about 1 minute until the dates are tiny little specs. It doesn't have to be 100% pulverized.
  • Scoop out a small sample with a spoon to test sweetness. If it's not sweet enough, add more dates.
  • Pour the mixture over a bowl or pitcher covered with cheesecloth or a nut milk bag. 
  • Strain the mixture until only pulp remains in the cloth, squeezing to get every last drop out. 
  • Next, stir in almond milk and vanilla extract,whisk and transfer to mason jars or preferred beverage containers. Chill and serve over ice. Can stay in fridge for several days.
