Hello guys, sorry for the late upload but I have been terribly sick for the past two weeks and I just didn't have the strength to do anything. Thankfully I am feeling a little bit better now, not 100% back to normal but better enough that I got out bed to make these delicious vegan brownies. I had been craving a super chocolaty endulging brownie for a few months and after looking up different recipes I kinda made up a recipe of my own and the end result was amazing! They had a nice crust on top and the center was incredible soft and chewy. So, here it goes, if you fancy an indulging chocolaty brownie definitely give this one a go!

You Will Need:
  • 1/3 cup coconut oil
  • 3/4 cup of pure cane sugar or any sugar alternative 
  • 1 tsp vanilla extract
  • 1/4 tsp himalayan salt or sea salt
  • 3/4 tsp baking powder
  • 1/2 cup cocoa powder
  • 3/4 cup brown rice flour or any flour you'd prefer
  • 2 flax eggs
  • 1/2 cup of chocolate chips or walnuts (optional)

  1. Preheat oven to 350 degrees F.
  2. Prepare flax eggs in a small bowl and let rest for 5 minutes.  (1 tbsp flax meal with 2.5 tbsp water- makes 1 flax egg. )
  3. Melt your coconut oil and then add it to a large bowl. Stir in the flax eggs, sugar, vanilla, baking powder, salt and cocoa powder. Whisk to combine. Add the flour, then fold in any chocolate chips or walnuts if preferred. 
  4. Scoop batter evenly into your brownie tin. Make sure you line it with parchment paper or grease the tin before hand. Bake for around 20-25 minutes, or until the brownies start to pull away from the sides. Remove from oven and let rest in the tin for 5 minutes before removing to cool completely on a plate or cooling rack.
