Christmas is definitely my favorite time to bake and these shortbread cookies are one of my favorites. This recipe is quick, easy, and fun and I've been wanting to make them ever since we came into the month of December. I think the powdered sugar on top just makes them look super festive and it gets everyone in the house in a lovely Christmas spirit.

You will need...
1 Cup Vegan Butter
1/2 Cup Cane Sugar
2 Cups All Purpose Flour (I used whole wheat and they came out just as good! )
A dash of vanilla extract
Icing sugar to top


Instructions:

In a mixing bowl whisk your butter, vanilla, and sugar until well combined.

Now slowly add the flour. (If you see that the dough is too crumbly add a dash of almond milk )

Once the dough is complete wrap in cling film and set in fridge for 45 minutes.

Once your dough is out of the fridge you want to preheat the oven to 325 degrees F. Then start to roll your dough onto a flour surface and start cutting out several Christmasy shapes.

Align your shapes onto a baking sheet and bake for 15 minutes or until they turn a light golden color.

Top with icing sugar and you are all done!
